Chocolate Cupcake with Special Toppers/Picks
My daughter will be leaving the Nursery before the Christmas break so I thought of making something special and memorable for the teachers to keep and so I made an audio-visual presentation of her nursery life. And since it’s Christmas I thought of making cupcakes too with the pers[...]onalized Cupcake Toppers/Picks.
INGREDIENTS:
50g Dutch-processed cocoa powder or 50g natural unsweetened cocoa powder plus 3pinch baking powder
240ml boiling water
175g all purpose flour (plain flour)
2 tsp. baking powder
1/2 teaspoon salt
113g unsalted butter, in room temperature
200g granulated white sugar
2 large eggs
2 teaspoons pure vanilla extract
2 cups chocolate morsels
Chocolate Frosting:
115g butter, softened
295g confectioners/icing sugar
75ml unwhipped whipping cream
1 1/2 tsp. vanilla extract
60g unsweetened cocoa powder
METHOD:
1. Preheat the oven to 190C (375F). Line 16 muffin tins with paper liners.
2. Stir cocoa powder and boiling water until smooth and let cool to room temperature.
3. Sift together the flour, baking powder and salt.
4. Using a stand or hand mixer, cream the butter and sugar until light and fluffy. Add the eggs one at a time and continue beating until smooth then beat in the vanilla extract. Add in the flour and fold until well incorporated. Tip in the cocoa mixture and stir until smooth. Add the chocolate morsels and mix.
5. Fill each muffin cup equally about 2/3 full with the batter. Add some more morsels if you like. Bake in the preheated oven for about 16-20 minutes.
6. The cupcake is cooked the skewer/toothpick inserted comes out clean and the top bounces back when touched just like a spring.
7. Let it cool completely on a wire rack before frosting. I used a star tip, but you can use any tip you prefer.
To make the chocolate frosting, cream the butter in a bowl, blend in the cocoa powder, vanilla extract, icing sugar alternatively with the cream. Beat until the right consistency is achieved. Add more cream if needed.
