FTF: Mini Cheesecake

I made this the first time on New Year’s Day for our Media Noche. I have no idea that it’s gonna look this good and would actually taste even better. Yes! I say, tastes even better! You still don’t agree? Oh, go ahead and ask my hubby… LOL! He’s not a fan of my baked goodies, but this one together with the Chocolate Crinkles I make almost every time I bake, is indeed a favorite! Wanna know his exact comment? Well, “Mum, this is so good!!! It’s like Starbucks cheesecake!”… Need I say more??? =)

And yes, as always… I’m sharing you how I did it… Just very few ingredients andyou’re good to go…



INGREDIENTS:
400g Philadelphia Light, softened in room temperature
75g granulated sugar (I use caster sugar)
2 eggs
1 tsp. vanilla extract
20 OREO cookies
30g butter, melted
fresh fruits of your choice (optional)
dark or milk chocolate, melted (optional)
And, get your 12 cupcake cases ready

METHOD:
1. Preheat oven to 180 °C.

2. Crush the OREO cookies, mix the melted butter and spoon mixture to each cupcake case pressing    with the back of the fork to make a base.

3. In a bowl, beat together the Philly and sugar just until well blended.

4. Add in the eggs one at a time, and again, mix just until well blended.

5. Add in the vanilla extract to enhance the flavor, and one more time, mix until just well blended.

6. Fill the cupcake cases evenly with batter.

7. Bake for 18-20 minutes or until centers are almost set.

8. Cool and chill for about 4 hours or even overnight if you can still stand the urge to take a bite, LOL!


9. When chilled, decorate with fresh fruits of your choice and you can also melt dark or milk chocolate and swirl it on your cheesecake. Or… you can just eat it as it is… It’s just good thing for me that New Years Day means preparing 13 different kinds of fruits and so I used up some to decorate. =)

Wondering why I emphasized too much on “mixing just until well blended” part? Well, my dear friends, cheesecake is a cake that shouldn’t have too much air. And while the air can be acquired through mixing, you have to be really careful not to overbeat or you will have too much air in your cheesecake batter. The result of too much air is that, your cheesecake center will rise while in the oven and quickly shrinks when taken out. This was my mistake when I first made this cheesecake.
Also, I’ve heard that water-bath is one of the best ways of baking cheesecake. I should have tried it the other times, but every time, I realized that I don’t have a huge baking pan where my muffin tin fits. But I’ll not hesitate of trying it. How do we do it? Well, just fill the baking pan halfway with water, just enough that about an inch or 2 of the muffin tin is submerged with water. This helps the cheesecake balance its temperature while in the oven.
Oh, I tell you, it’s easy as pie… It will only take you 10 minutes to prepare. What are you waiting for? Get everyone guessing how you turned into a great baker! LOL
And because I’ve been missing in action in Mommy Willa’s FTF, I made this entry special – special because as I said, it’s hubby’s fave! =)
