FTF: Shrimp Scampi

I’ve got about a pound or more of shrimp in the fridge and I want to cook something with it in less than 10 minutes as hubby’s already on his way home. I’ve been very busy online and I forgot that I have to turn myself into a cook when 6pm strikes. hahaha!!!

And so I searched for that recipe and stumbled upon this new dish called shrimp scampi. I was supposed to pair it with pasta, but to my dismay, I don’t have any at that time. So since we’re rice addicts, we thoughtit’ll do. And it did!

INGREDIENTS:
1 1/2 pounds shrimp (the more, the merrier!)
50g butter
1/2 tsp. olive oil
3-5 cloves garlic, minced (I just used 3 ‘coz hubby’s not a fan of garlic)
1 tsp. lemon (you can use more)
1 tbsp. white wine (more if you like, I just can’t, I have a Cheeky Munchkin)
1/2 of whole red bell pepper, diced
1 tbsp. spring onions, chopped
1 tbsp. chopped parsely
salt and pepper to taste

METHOD:
1. In a skillet, melt the butter and add a little olive oil as this prevents the butter from browning. Add in the garlic, cook until softened (not browned). Add in the shrimp, lemon and white wine. Let it bubble allowing some white wine to evaporate. Sprinkle the red bell pepper, spring onions and some parsley. Add salt and pepper to taste.

2. Garnish with some more parsley and bell pepper. Serve over pasta or rice. DONE!

Trust me, this won’t take you more than 10 mins to prepare and cook. It was ready just in time for hubby’s arrival. =)

    Sarap nyan for sure, ako rin naman,mas gusto ko yan kainin w/ rice than with pasta.

    Btw, re:papaya, pareho tayo,I prefer Sayote,kaya kahit na may available papaya sa Asian Store, Sayote pa rin binibili ko.
