FTF: Ginataang Kalabasa (Squash in Coconut Milk)

Squash or Kalabasa in Tagalog is widely availbale here in London, so one time I decided to cook it in coconut milk. It usually has string beans so when I found string beans for the first time, I immediately asked how much and I almost fell down when the vendor answered, “£3.00″. Gosh! It’s like $5? So I went back to my ever reliable green beans.

INGREDIENTS:

1 onion

3 cloves garlic, crushed

1/2 kilo squash

string beans/green beans

1 can coconut milk

garlic powder (optional, I just like garlic powder in most of my dishes)

salt

pepper

METHOD:

1. In a saucepan, pour the coconut oil then add the onion, garlic, garlic powder, salt and pepper. Let boil. Add the squash and let cook according to your preference. I prefer my squash to be a bit soggy. Just before your squash cooks, add in the beans and simmer for a few more minutes.

2. Adjust the seasoning according to your taste after adding the squash and beans.

I cooked this the second time and added prawns on it. It tasted so much better. So if you’re planning to add prawns/shrimps, add them when the squash is almost cooked. Others add ginger, but I am ok with my ingredients.
