Paksiw na Isda
I was able to buy 3 frozen mackerels about 10-15 inches long for £2.99 (roughly about $5). Hubby is a real fish-lover and so thinking of the best dinner hasn’t been hard for 2 days in that week. He loves any kind of fish cooked in any way.
Our family is a very small eater and 1 piece is more than enough for the 3 of us. I fried the tail part and stewed the head part to vinegar. My soon-to-be 5 year old is just like her dad, so when asked what she wants, aside from her favorite misua, she answers “FISH!”
INGREDIENTS:
1 mackerel – head part, cleaned
1 medium onion, sliced
2 garlic cloves, crushed
1 thumb-sized ginger, sliced
1 small bell-pepper (long green chili if available)
1 medium eggplant/aubergine
salt
pepper
3-5 tbsp. vinegar
1/4 cup water
1 tbsp. oil
METHOD:
1. Place the fish in the bottom of the glass/teflon coated saucepan. Add in all the ingredients except eggplant then bring to a boil. Cover and let simmer for about 10 minutes and turn the fish over once. Add in the eggplant and cover for about 3 more minutes.
2. Serve.
Easy peasy, right? This is a traditional Filipino dish, but cooking and ingredients vary from household to household.
This is my entry for this week’s Nostalgia because this is one dish my lola cooks very well. She has the yummiest paksiw na isda ever. And our favorite, ayungin is the best! Also, visit FTF for more food trippings.
