Dates to Break Fasting During Ramadan

Just before Ramadan started, my dear friend based in Dubai visited us and among the many pasalubongs she gave us, only this pack of dates is left for me to capture. :lol: All the chocolates were gone in no time. Thanks Mareng Jo!

She said that Muslims take dates while fasting. I thought they are not allowed to take in anything until sunset, but I learned that their beloved Prophet used to break his fast with dates, that is why many Muslims eat dates during Ramadan. I haven’t tried them yet, though. Now I’ll go and grab a piece. ;)

Cherries Berries Galore!

Last weekend, cherries are all over and they are pretty cheap (2lbs. for £1). We ate it the way we eat java plum back in the Philippines – sprinkle some salt and shake! shake! shake! Yum!!!

I placed these cherries into the stainless steel bowl and while I take pictures hubby asked me to transfer them into a more decent bowl but I insisted and good thing my ever reliable Canon camera did justice to these lovely cherries. :)

Apple and Honey Facial Mask

Here I go again… Because I started looking for some home-made beauty tips, I can’t stop myself and now wanting for more! ;) Apple and honey??? Yum!!! :lol: But applying them to face? eeekk!!! That’s sweet! haha!!! Well if you’re afraid of going to the derma (I am! :? ) then why not try doing some yummylicious home-made facial masks? It is said that this facial mask and the oatmeal facial mask I just posted earlier help treat acne. I don’t have pimples, but clearing my face with those white and black creatures is what I badly wanted. evil

Now how do you do it? Simple. If you have a blender or food processor, blend the peeled and cored apples and mix with 3-4 tablespoons of honey until you make a paste-like mixture. Apply to your face, relax and rinse off with warm water after 20 minutes. Done. Enjoy the refreshing feeling of the yummy apple shake you just dumped into your face. :lol:

Let me know if you’ve also tried this, I will as soon as I buy honey this weekend. I only have golden syrup here and I know it’ll be a disaster if I use that. haha!!!

I made this the first time on New Year’s Day for our Media Noche. I have no idea that it’s gonna look this good and would actually taste even better. Yes! I say, tastes even better! You still don’t agree? Oh, go ahead and ask my hubby… LOL! He’s not a fan of my baked goodies, but this one together with the Chocolate Crinkles I make almost every time I bake, is indeed a favorite! Wanna know his exact comment? Well, “Mum, this is so good!!! It’s like Starbucks cheesecake!”… Need I say more??? =)

Hubby once bought whole fresh pineapple in the market (yes! he sometimes does the grocery… lucky me!) and when he came back he said, “Mom, I bought pineapple. Do you know how to peel it?” and so I said, “Hhhmm… Watch and learn!” In our almost 5 years of marriage, I believe it’s the first time we bought fresh pineapple and he hasn’t seen me peel one, yet. Recalling the other years of my life prior to my married life, I don’t think I’ve tried peeling one though, so basically what I used was – stock knowledge??? haha!!! Fresh Kiwi-Strawberry-Banana Smoothie

I’ve made this smoothie just before winter hits us and I can’t wait for summer to try it again.

Just blend all the fruits, yogurt (I used vanilla flavor) and some ice cubes all together and you’re off for a little coldness in a hot summer day.

Spiced Pineapple Chicken

I’ve seen quite a lot of recipes with Chinese 5 Spice powder, so when we went to the grocery on weekend, i decided to buy 1. When I searched again for some recipes, all those that I have read were all gone! LOL.. but good thing, there’s this one recipe i thought my family would love. I have no idea about the taste of that Chinese 5 Spice powder, I just followed the recipe and TADAH!!! It was good!!! It was like a Chinese dish (oh hence the word Chinese 5 Spice..LOL) we often eat in Chinese restaurants.

I always cook for 3 (well, 2 + 1 little darling who eats too little) so you may want to double or triple the recipe if you’re cooking for more. Happy Home-Cooking!



INGREDIENTS:
1 tsp. vegetable oil
2 chicken thighs
1 tbsp. soy sauce
1/2 tbsp. light muscovado sugar (brown sugar may be used)
1/2 tsp. tomato purée (tonato sauce may be used)
1 small can pineapple slices, juice reserved (I only used half of the can)
1/4 tsp. chili powder (optional)
1/2 tsp. Chinese 5 spice powder
may use coriander leaves to garnish

METHOD:
1. In a small bowl, mix soy sauce, sugar, tomato purée and pineapple juice.

2. Heat the pan, add the oil and fry the chicken in a low heat until tender. Slow cooking is recommended for the chicken to cook evenly and if using boned chicken thigh, make sure to cook the inside portion very well.
3. Add the pineapple rings to the pan and let the flavors of the pineapple be extracted alongside with the chicken.
4. Sprinkle the chili powder (if using) and the Chinese 5 spice powder to the pan and fry until you smell the aroma the powder brings.
5. Tip in the soy sauce mixture and let it bubble around the chicken and pineapple until the sauce gets slightly thick.
6. Serve. You may arrange some coriander leaves for garnish.

Serves 2 and a little munchkin. LOL!

Btw, you can replace chicken with duck, pork, beef.. whatever you fancy. Enjoy!
