I was able to buy 3 frozen mackerels about 10-15 inches long for £2.99 (roughly about $5). Hubby is a real fish-lover and so thinking of the best dinner hasn’t been hard for 2 days in that week. He loves any kind of fish cooked in any way.

My cheeky munchkin don’t eat pasta in red sauce so when I cook pasta it has to be white. She never liked it and unfortunately, when she tried it she got hospitalized because of food poisoning. Well, it’s home cooked and it didn’t show any sign of spoilage so we were really shocked when everyone in the family who had it was throwing up after a few hours. Alyssa’s Tita Joana gave her lots of DVDs and one of them is Doraemon. She isn’t a fan of it, but because there are dinosaurs in there, she is having fun watching it. Oh, if you want to know how fascinated my daughter is with dinosaurs, I already told the story here. One of the dinosaurs eats sushi, so just last week she bragged her dad for some sushi believing that she’s a dinosaur who loves one too. I, myself is a real Japanese food eater and I eat everything (I mean… EVERYTHING) Japanese. Japanese foods here aren’t very cheap to someone as spendthrift as me… LOL! So having some is already a real treat. =)
Daddy knows how much sushi and maki buff I am, so he bought these not only for Alyssa, but for me most specially… Sweet??? Hhhmmm… as always!!! =)

Seafood Rice A La Paella

Seafood Rice A La Paella
I’ve been craving for paella for quite some time already and since I don’t have saffron, I once again explored my creativity just to satisfy my palate. Since I have frozen mixed seafoods ready, I tried my best to make it look and somehow taste like real paella. My version is very easy, all I did was mixed everything together.
INGREDIENTS:
5 cups steam-cooked rice, whatever kind you prefer
2 tbsp. olive oil
1 medium onion, chopped
2 cloves garlic, chopped
250g mixed seafoods, mine is frozen
2 cups mixed vegetables (corn, peas, carrots) – add more if you like
2 tbsp. Kikkoman soy sauce
2-3 tbsp oyster sauce
2 tbsp tomato puree
2 egss, hard boiled
1/2 tbsp. dried parsley, fresh can also be used

salt and pepper to taste

METHOD:
1. Bring the saucepan half filled with water and the mixed seafoods to a boil and let cook. Add a dash of salt and pepper. Drain. – I do this because some frozen seafoods are so chewy when not thoroughly cooked.

2. Use a huge pan to have a good space for mixing, use wok if you have. Heat the oil and sauté the onion until translucent. Add in the garlic and sauté for a few seconds not letting the garlic burn. Tip in the drained mixed seafoods and mix well with the onion and garlic. Cook for about 2-3 minutes. Add in the mixed vegetables and cook for another minute.

3. Pour in the Kikkoman soy sauce, oyster sauce and tomato puree. Simmer for about a minute to seal the taste. Now, it’s time to add in the rice. Continue mixing until the mixture is evely distributed with the rice. Spinkle the parsley and mix.

4. Arrange the hard boiled eggs the same way as the picture and sprinkle with a little more parsley to garnish.

Now, you have seafood rice a la paella. Happy Home-Cooking! =)

Grilled Salmon in Parsely Cream Sauce

We saw one pre-cooked meal in a box with this recipe but using different kind of fish, so since we are not buying ready made meals, I decided to just cook it from scratch. First I thought Daddy won’t like it as creamy meals are not pleasing to his palate, but I thought wrong. As of now, we had this meal twice already and would have had it more if only salmon is cheaper.. LOL!

INGREDIENTS:
2 pcs. salmon fillet
2 tbsp. butter
2 tbsp. corn flour/all purpose flour
1 1/2 cup milk
1 tbsp. finely chopped parsley + few leaves for garnish
1/2 cup cream (optional)

METHOD:
1. Heat the grill pan. Season the salmon with freshly ground salt and pepper. Cook on the pre-heated grill pan for about 4 mins each side or until the fish is tender.

2. While the salmon is cooking, in a very low heat melt the butter in a small saucepan and add in the flour. Mix together, but don’t brown the flour. When the butter and flour are well incorporated, pour in the milk and stir continuously. You can always add some more flour and milk until you achieve the right consistency you would want for your sauce, but be sure to dissolve first the flour in a cold water as it will not dissolve easily when directly added into the cooking sauce. Tip in the cream (is using), stir. Add in the chopped parsley and stir for about 1 1/2 mins more.

3. Arrange the salmon in a plate and spoon in generous amount of sauce. Garnish with parsley leaves.

4. Serve with rice or pasta. Dig in! ;)

This meal was loved by my family. They enjoyed it so much, not to mention the nutrition it gives.

Salmon Teriyaki

Salmon Teriyaki

Salmon is always expensive therefore, I have to do my best to give justice to this rare dish (rare in our kitchen…LOL).

Japanese foods strike my palate 100% – and I mean the 100%. There’s no Japanese food that I can’t eat, but for my hubby and daughty they are just about less than half a percent so aside from thinking of the best recipe to do with the expensive salmon I also have to be creative for them to like this Japanese dish which I already decided to cook and yeah they have no choice at all. ;)
Below is my recipe for everyone to try. Happy Home-Cooking!


INGREDIENTS:

2 slices salmon fillets
2 tbsp. teriyaki sauce (I used Kikkoman)
1 tbsp. soy sauce
1 tsp. sugar
1 tbsp. grated ginger
1/2 tsp. sesame seeds
2 cups steamed rice

METHOD:
1. In a medium-sized bowl, combine the teriyaki sauce, soy sauce, sugar and grated ginger together. Stir until sugar dissolves.

2. Add in the salmon fillets and marinade for atleast 15 minutes.

3. Heat the grill. Grill the salmon (I used grilling pan) about 3-5 mins skin side down then turn over and cook for a further 2 mins and remember to keep the fillet pink-ish for real freshness.
4. A few minutes before the salmon is done, transfer the remaining marinade into a small saucepan and boil until sauce thickens a bit.
5. Get the rice ready into individual servings and place the salmon of top. Spread the sauce over the salmon and rice and sprinkle with sesame seeds.
6. Serve hot. Enjoy!

When Daddy Mark and Alyssa tasted it… hhhmmm… It worked!
